Smoke. Oak. Dark caramel. Spices. When José first tasted this coffee, its flavour reminded him so much of whiskey that the name was immediately clear.

Parainema from Finca Jerusalén in Honduras, naturally processed and rated 88 SCA.
Its “whiskey” character comes entirely from the way the coffee is processed. With the Natural process, the coffee cherries are dried whole, with the fruit still surrounding the beans. During this process, complex aromas and flavours develop – and in this particular lot, they created an unusually deep profile reminiscent of the notes we commonly associate with whiskey.
In the cup, smoke and oak meet the sweetness of dark caramel and coconut. Red apple follows, accompanied by notes of brown spices, ginger and cedar. José Whiskey has virtually no acidity – instead, its profile is built around sweetness, spice and deep woody notes.
That is exactly why we love it especially as an espresso, where its intensity and unusually full character can truly shine. It is a coffee for those looking for a bold and distinctive flavour experience without the bright acidity often found in specialty coffee.
Is it whiskey? No.
Will it remind you of whiskey? Quite possibly.
