We are not a trader and a supplier.

We are two people on opposite sides of the world, connected by the same belief about how coffee should be grown, processed, and shared. José Francisco Cuellár Fajardo cares for Finca Jerusalén in the mountains of Honduras. I select, import, and roast each harvest so that its character remains intact.

José works at the beginning of the story. I work at its end.

Yet we share the same goal: to ensure that every cup reflects the very best this extraordinary farm can produce.

ONE FARM, NO COMPROMISES

Our coffee does not come from dozens of plantations. We do not buy from importers’ catalogs. We do not chase the lowest price or the highest volume. Year after year, we return to the same place.

To the mountain forests of Santa Bárbara, Honduras, where coffee grows at elevations of 1,350–1,600 meters beneath the shade of native trees. The forest has never been cleared, the soil has preserved its natural balance, and the coffee ripens slowly, just as it has for generations.

Every bean that bears the name Ebel Coffee comes from this place.

PURITY OF PLACE IS PART OF THE FLAVOUR

We believe flavour is shaped by more than just variety or roast profile. It begins much earlier.

In healthy soil. Beneath the shade of rainforest trees. In pure water. In the patience of people who harvest only perfectly ripe cherries.

That is why origin matters more to us than marketing trends.

Today, it is common to offer coffees from dozens of origins and hundreds of different lots.
We chose a different path. We do not aspire to be the biggest. We aspire to be the most faithful interpreter of a single farm.
Each harvest is personally selected, imported as green coffee to Prague, and roasted in small batches to reveal its natural character.
We are not chasing the next sensation. We are building quality that lasts.

MORE THAN TRADE

Over thirty years of working with coffee, I have visited many countries and tasted thousands of samples.

In the end, I came to understand that true exceptional quality does not lie in endless choice. It lies in trust between the farmer and the roaster.

In the trust between the person who grows the coffee and the person who prepares it.

That is why Ebel Coffee is more than a brand. It is a long-term commitment to one place, one farmer, and to people who want to know exactly what they are drinking.
