Why we chose José?
Because there is a real person behind every cup.
At a time when most coffee travels the world anonymously, changing hands multiple times before it reaches a roastery, we know its story from the first blossom to the final bean. José Cuellár Fajardo is more than a coffee producer. He is the steward of a family tradition that has been part of Finca Jerusalén since 1869.
On his farm, coffee does not grow on cleared land. It grows beneath the canopy of a native forest, surrounded by birds, orchids, and the wild nature of the Honduran mountains. Every year, we return to Honduras. Together, we walk among the coffee trees, evaluate new harvests, taste individual lots, and decide which coffees will make their journey to Prague. We do not choose from a commodity exchange or an importer’s catalogue. We choose based on flavour, character, and trust.
That is why every bag carries one name: José.
