Description
A special blend of three Arabicas prepared directly on the farm according to farmer José’s recipe. These coffee plants also grew on the Finca Jerusalén farm — in the pristine Honduran jungle, where coffee and nature are treated with respect and love. The coffee is cultivated in the open among forest trees, palms, banana plants, citrus trees, and abundant greenery. The lush vegetation and the vibrant life in the forest impart a unique character to our coffee.
After harvesting, the coffee cherries are sorted and submerged in water. Healthy cherries sink to the bottom, while the defective ones and impurities float to the surface for easy removal.
Using a depulper (wet mill), the skin and pulp are removed. What remains is “parchment coffee,” covered in a layer of mucilage (slime). The parchment coffee is placed in fermentation tanks for 12 to 48 hours to break down the mucilage layer. After fermentation, the coffee is thoroughly washed with clean water to remove any remaining mucilage. It is then sun-dried for up to several weeks until it reaches a moisture level of about 10-12%.
Rated by experts from the Specialty Coffee Association, Don José Blend achieved an outstanding 89 points out of 100.
The coffee is not chemically treated, and no pesticides or other unnatural substances were used in its production.
