FARMER JOSÉ CUELLÁR FAJARDO TELLS THE STORY OF PARAINEMA
It’s a beautiful thing, a work of art. This coffee is a diamond that encapsulates my life into a cup of coffee.
I saw him from a distance – it was him, the jaguar. He was unusually low, at 1,350 meters. He was lying down, probably resting.
He heard me and slowly, majestically, made his way back to the mountain peaks. At that very spot, in the forest where he rested, I identified a beautiful Parainema at its peak ripeness.
I DIDN'T TELL ANYONE FROM THE FARM .
I requested a very separate harvest. It was a job for just one picker, exclusively for her – for Parainema. I assigned another special person for the peeling process.
I had Parainema washed and fermented in magical mountain spring water.
The drying was done discreetly, very separately. It took 40 days of gentle warming in partial shade.
NO ONE KNEW I WAS CREATING A DIAMOND.
I protected it from animals and evil spirits!
I requested scrapping on our small machine. The selection of impurities and defects took us a toll — 15 days, grain by grain. No, no, this coffee never traveled to a processing facility.
JOSÉ, WHO SELECTED THE DEFECTS?
When Parainema was ready, I requested it to be brought to my office. I turned on the air conditioning, which ran for three weeks, 24 hours a day, until the moment of transport.
Everything was done by hand, and then we tasted it. One cupping after another, it was incredible!
It tasted unbelievably rich; it was like thick syrup!

Step by step, day by day, we continued tasting (cupping), then with certified independent cuppers. They kept coming back again and again, and everyone said:
What is this? Ah, this is something we haven’t tasted here before!
I chose an artistic packaging; it wasn’t regular jute, but yellow, to resemble him – the jaguar! When we loaded the yellow mini bags onto the truck, everyone had their eyes wide open.
