Małgorzata (Gosia) Ebel
Since the 1990s, a pioneer of true specialty coffee in the Czech Republic, who has traveled the world for coffee. Thanks to Finca Jerusalén, she fulfilled her dream – to find a place where coffee of top quality is grown responsibly towards nature, ecologically clean, but also friendly, with consideration for people and their livelihoods.
Meeting José and his truly exceptional farm eventually led Gosia to a fundamental change in her coffee business. She took a step that few European roasters and coffee traders would dare – she decided to process and sell only coffee from Finca Jerusalén under her brand, Ebel Coffee.
The ability to captivate and sell elite coffee, no matter how highly rated, at a fair price significantly impacts the economic cycle of the small farm in the Honduran mountains. The success or failure of Ebel Coffee in the market directly affects the earnings of many people living in one of the poorest countries in the world.
Gosia has never been afraid to do things differently from everyone else, and these decisions are a direct testament to that.

Honduran agro-engineer, representative of small farmers, coffee enthusiast, and innovator.
He took over the wild farm twenty years ago, finding the courage and determination to care for the family legacy as the only one among six siblings. Like in fairy tales, the youngest succeeded in breathing new life into the farm.
In Małgorzata Ebel, he finally found a buyer who respects the hard work on the coffee farm and strives for fair trade.
With an SCA rating of 90+ points, Finca Jerusalén is a place of a thousand flavors from a single farm.
A FAIRY TALE OF A THOUSAND COFFEE FLAVORS FROM ONE FARMELITE COFFEE
Elite Arabica coffee plants grow freely among diverse trees of the mountain wild forest, surrounded by bushes and flowers. No chemical treatments are used in their cultivation.
THE QUEEN AMONG ARABICAS
The pride of the farm is the Honduran Gesha, but other varieties are also grown, such as Parainema, Lempira, IHCafé 90, Catuaí, Cattura, Maragogype, and Noventa.
The dark red to purple fruit is the foundation of our elite coffee. For several months, the pickers carefully select the ripest cherries.
For each micro lot, José chooses the method of processing the coffee cherries and the most suitable fermentation technique. This allows the farm to create a highly diverse range of flavor profiles, which are further refined during roasting at Ebel Coffee.
The preparation method is entirely up to you – espresso, moka, aeropress, French press, vacuum pot, chemex, cezve, or drip coffee – Honduran high-altitude coffee will always guarantee a great experience.
