The best of espresso has a rich, nut and caramel-like crema of the density of whipped cream. It is made out of freshly roasted, high quality coffee beans. For the best espresso we grind our coffee right before its preparation on a medium fine grain. Our machine and grinder are always clean, cups are always warmed up. We brew our coffee shots no longer than 20 seconds. Never brew an espresso any longer, as you would get all kinds of unpleasant substances you don't want to taste if you do. Perfection lies in knowing when to stop.
